When I asked Juliette to be involved in this challenge, I was expecting great things! And I wasn't wrong. I made these myself today and these egg wraps sushi style are awesome. Here's Juliette:
We love eggs and yes I would even venture to describe ourselves as a household of egg-addicts, we
just can’t get enough! And why wouldn’t you love them, (unless there was an allergy or intolerance
of course), they are what I like to think of as one of nature’s perfect little multi-vitamins. A gorgeous
nutrient dense real food package that delivers an awesome healthy punch! And they are so
versatile, especially for the lunch box. We often include eggs as mini quiches, omelettes, fritters or
even on their own soft or hard boiled – they are truly versatile!
By popping an eggy containing food in your child’s lunch box you will absolutely be ensuring they are
getting a whole host of nutrients that will support their brain for learning, memory, concentration
and mood throughout the day as well as providing them with much needed energy. They are packed
with protein and contain all 9 essential amino acids, they are full of vitamins and minerals
particularly those lovely fat soluble vitamins A, D, E and K which are so important for immunity,
proper cell growth, vision and bone health as well as contain high levels of omega 3 essential fatty
acids so important for a developing brain.
Recently it was decided that we needed to come up with a new way to have our eggs and eat them
too and so our egg sushi roll was born. They are quick and easy to make, can contain a variety of
lovely filling ideas and are super healthy to boot! Especially when cooked in virgin coconut oil which
is not only immune boosting in its own right but a wonderful addition to ensure proper absorption of
all those lovely fat soluble nutrients.
Today’s version is goat’s cheese, shredded chicken, avocado, lettuce and shredded carrot.

Egg wraps
Ingredients
- 2 eggs
- 1 tbs milk of choice
- Coconut oil or butter
- Fillings of your choice
Instructions
- Lightly whisk eggs and add milk.
- Heat coconut oil or butter in pan over medium-low heat
- Pour ½ mixture into pan and cover with lid
- Once mixture looks cooked, flip and cook for about a minute.
- Once cooked add filling and roll
