Baking. Yum. Baking with a 4 year old: yummy and fun. I'm all about recipes you can make with your kids that they will enjoy making and eating. Add to that a few "good for you" ingredients...and you can almost convince yourself that there's nothing naughty about this slice.
This slice has been in my recipe repertoire for so long I feel like I'm giving you a family secret. It's crumbly, it's zesty, it's coconutty. Realistically, it doesn't get much better than this for an afternoon treat.
This probably isn't the ideal lunchbox fodder if your child is prone to launching lunchboxes or running to school as it will be a crumbly mess. But it's ideal for family adventures as it is easy to share. The base of this is reminiscent of an anzac cookie and just as yummy whilst the icing gives it an extra sweetness. If you want to go without icing feel free, but it really makes this one.
So go put the kettle on and turn the oven on as you walk past..because this is too delish to pass up!

Ingredients
- Lemon and Coconut Slice
- Ingredients
- 1 cup self raising flour
- ½ cup rolled oats
- ½ quinoa flakes
- 1 cup dessicated coconut
- 1 egg
- 125 grams butter
- 2 tablespoons golden syrup
Icing:
- 1 cup icing sugar
- 1 tablespoon butter
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 180 degrees
- Mix the dry ingredients
- Beat in the egg
- Melt together the butter and golden syrup
- Add and mix well
- Press into a lined 8" square pan
- Bake 15-20 minutes- until golden brown.
- Allow to cool
- Mix the icing ingredients. Ice the slice then top with extra dessicated coconut.
- Makes about 20 squares.
