When it comes to making cake, well, I'm no stranger to it. But this amazing whole apple food processor cake might actually shake up the way you cake.
Designed for lunchboxes and only 6 ingredients (none of which are sugar!) it's the perfect way to get some quick baking done for school lunches.
Whole apples make this amazing
It's all about the whole apple! Rinsed properly (or buy organic) apple skin adds so much flavour into this cake. We chop out the cores and the base, but aside from that- the apple is going in here peel and all! Straight into the food processor.
No extra sugar
The fruit contains naturally occurring sugars as does the yoghurt. Then we don't need to add any more! This is going in the lunchbox after all, and we want to try and minimise the sugar intake of our kids during the school day if we can. To be honest, though, the apples make this so sweet, they won't even notice!
Perfect for the lunchbox
Why? Because it's low crumb, it will take a beating (think tossing of school bag around before school!), it's got no added sugar and it is filling thanks to the yoghurt and eggs used in the recipe.
Ingredients
- Apples- I've used pink lady just because of their sweetness
- yoghurt- any good natural yoghurt will do- not flavoured
- butter-unsalted
- eggs- use free range where possible
- cinnamon-this helps with the lack of sugar
- self-raising flour - for convenience- feel free to swap for plain with baking powder- it's a one cup flour to one tsp baking powder ratio
Method
- Preheat the oven to 180 degrees celsius. Chop the apples so the food processor will be able to process them
- Dump into the food processor and blitz for approx 40 seconds. We don't want puree- check out image 2
- Add the eggs, yoghurt, butter to the food processor. Process for 15 seconds. Check out the consistency in image 4
- Add the flour and cinnamon, process until smooth (image 5)
- Pour into a lined slice pan (27cm x 17.5cm x 3.5cm) and bake for 45 minutes at 180 degrees celsius
- Cool on a wire rack before slicing
Freezer friendly
Of course! You can freeze this amazing whole apple food processor cake in slices, perfect for the lunchbox. They will defrost in the lunchbox by recess or lunchtime.
Make sure the cake is completely cold before attempting to freeze.
Tips for success
Don't over process, or you will get a separation between the ingredients. The texture doesn't have to end up super smooth, after all you have fruit in there!
More ways with apple
Have you noticed we love apples at Kidgredients? They are always in our lunchboxes, chopped and we love baking and making with them. You know what they say...an apple a day keeps the doctor away.

Loving the two recipes ive tried here so far!
Do you think it might be possible to sub some of the butter with homemade peanut butter here instead?
Kylie says
I've never tried it but you could give it a go! We can't send any nuts to school, hence why I have kept it nut free.

You've thought of EVERYTHING with this recipe! Just a few, simple ingredients ... NO added sugar (yay!), and it all just mixes in the food processor (so easy)! I mean ... even thinking about the fact that its texture makes it perfect to stand up to the beating a normal school lunch bag undergoes. So smart!

Everything has to survive in the lunchbox here- I swear my son plays soccer with his school bag!

I totally LOVE how this can be made in the food processor! It doesn't get any easier than that!
Kylie says
It sure doesn't! One lot of washing up!
Amanda Wren-Grimwood says
I really like the idea of not preparing the apples as it takes so much time. Brilliant idea!
Kylie says
It makes it so much quicker!
Kim says
I only have vanilla yogurt at home, would this be ok to use?
Kylie says
Give it a go! It will be a lot sweeter than the original version because vanilla yoghurt contains sugar.
Megan says
Is there a way to make this without a food processor? I have a handheld smoothie maker thing but not a blender or food processor.
Thanks
Kylie says
Not knowing your smoothie maker, I can't really say if it will cope or not, sorry!
Michelle says
This looks so delicious!! Could you recommend a replacement for the butter? Thank you x
Kylie says
Sure, if you want to swap out the butter, you could use coconut oil!

I used to make a similar one but with more spices which my dad loved. This one seems a lot lighter. I have to try it.
Kylie says
It is quite light! It's a favourite around here.

Wow, three apples in this cake and no sugar!!! I love the fact you kept the skin on the apples. I rarely ever peel an apple.
Kylie says
It seems such a waste to not use the peel when they contain so much flavour!
