This whole apple food processor cake is designed to make a cake quickly and simply with no fuss! Designed for lunchboxes and only 6 ingredients (none of which are sugar!) it's the perfect way to get some quick baking done for school lunches. Make this 24 piece cake in under 60 minutes- great for freezing and grab and go lunches.

It's all about the whole apple! Rinsed properly (or buy organic) apple skin adds so much flavour into this cake. We chop out the cores and the base, but aside from that- the apple is going in here peel and all! Straight into the food processor.

What goes into the recipe

- Apples- I've used pink lady just because of their sweetness, you could use granny smith apples, but you might need to add extra sugar. Medium apples are the best size for this recipe.
- yoghurt- any good natural yoghurt will do- not flavoured- I use my full fat greek yoghurt in it
- butter-unsalted
- eggs- use free range where possible
- cinnamon-this helps with the lack of sugar
- self-raising flour - for convenience- feel free to swap for plain with baking powder/ baking soda- it's a one cup flour to one teaspoon baking powder ratio. Be sure to fold the baking powder through well, or use a whisk to distribute it through the flour.
How to make this recipe
- Preheat the oven to 180 degrees celsius. Chop the apples so the food processor will be able to process them
- Dump into the food processor large bowl and blitz for approx 40 seconds. We don't want puree- check out image 2
- Add the eggs, yoghurt, butter to the food processor. Process for 15 seconds. Check out the consistency in image 4
- Add the flour and cinnamon, process until smooth (image 5)
- Pour the batter mixture into a lined slice pan (27cm x 17.5cm x 3.5cm) and bake for 45 minutes at 180 degrees celsius
- Cool on a wire rack to room temperature before slicing
Expert Tips and FAQs
Don't over process, or you will get a separation between the ingredients. The texture doesn't have to end up super smooth, after all you have fruit in there!
Of course! You can freeze this amazing whole apple food processor cake in slices, perfect for the lunchbox. They will defrost in the lunchbox by recess or lunchtime.
Make sure the cake is completely cold before attempting to freeze. You can wrap leftovers in baking paper to ensure they don't stick together in the freezer.
It is for my kids! But if you need it to be sweeter, you can add ⅓ cup sugar to it, or you could ice it. Icing it is a good way to first give it a go, then add more sugar. If you want to ice it, the icing from this cake would work really well: Apple, Carrot and Coconut Cake.
Because we aren't adding any extra sugar, sweeter apples work best, like pink ladies or even royal gala. Really it comes down to personal preference.

Hi Melinda, as it says in the post: yoghurt- any good natural yoghurt will do- not flavoured. I use the yoghurt I make in everything, it's a full fat greek.

Give it a go! It will be a lot sweeter than the original version because vanilla yoghurt contains sugar.
