    Avocado banana muffins

    Well. Avocado banana muffins. That's not what these are if you judge by the photo. Right? Well, they are probably my best smuggling feat so far. These double choc muffins are hiding a whole avocado and two bananas. Anyway- the good news is- they completely fooled Master 7.

    Perfect for kids for the lunchbox, morning tea snack or after dinner for dessert. They are so yummy, it will be hard work getting them to stop at one!

    Why smuggle avocado?

    Avocados are full of good fats! And being dairy free, they are perfect for adding to muffins. But, they can be a bit of a disaster for some kids- Master 7 can't stand them!

    So hiding them in muffins, especially when they are turning super ripe very quickly on the bench- is fun and delicious. Use cocoa powder to get rid of the greenness like I did and no-one is any the wiser. And have you noticed that they (like bananas) go from all good to "EAT ME PEOPLE OR I WILL DIE"...in a matter of minutes?     The quickest avocado banana muffins ever to mix

    Don't bother with doing these by hand- make your blender, food processor or in my case Magimix Cook Expert do the hard work. It means they mix up in 30 seconds! Then stir through the chocolate chips and you're good!

    And don't worry about this damaging the texture, these avocado banana muffins have a lovely fluffy texture regardless. It also means no sifting!

    Low sugar

    These avocado banana muffins are quite low in sugar, with only ¼ cup added in. You could completely eliminate the sugar if you want, it won't make a difference to the texture, but I find that the avocado can make them a little bitter without it.

    How to store avocado banana muffins

    Look, really we shouldn't even need to discuss this. They will disappear from the bench as soon as they are made. But, if you want to store them, the fridge is your friend.

    For longer-term storage they can be frozen on a tray until solid and then popped into containers. They defrost easily in the lunchbox or in the fridge or even on the bench.

    Ingredients

    • 1 ripe avocado
    • 2 ripe bananas
    • 2 eggs
    • ½ cup water
    • ½ cup cocoa powder
    • 1.5 cups self-raising flour
    • 1 teaspoon vanilla extract
    • ¼ cup sugar
    • ½ cup chocolate chips of your choosing

    Instructions

    • Preheat oven to 180 degrees celsius.
    • Place all ingredients excluding the chocolate chips into the bowl of a food processor or blender and blitz until smooth.
    • Add the chocolate chips and stir through.
    • Add to a 12 pan silicone muffin pan or line a normal one.
    • Bake for 20 minutes.
    • Cool in the pan then turn out onto a wire rack.

    Notes

    Store in the fridge.
    Freeze on a tray until solid. Then put in containers.
