Halloween. Well, it's not really the done thing around here, but I really wanted to make something cute as I've had candy eyes in the cupboard taunting me for a year! I decided to try and make some chocolate swamp monsters...basically a cute and healthier version of chocolate spiders...with no nuts!
These are sooo simple to make that I've convinced master 4 to make a video of them for me. Basically, these are so yummy that they won't last long! Don't make them if you have no commitments for the day...you will find yourself standing at the fridge waiting for them to set and then you will probably eat them all in one sitting.
I know this from experience. Not mine of course. But seriously, these are moderately healthier than the usual halloween treats and ever so cute. They only use 5 ingredients and the outcome is a simply adorable treat that the kids will go crazy for.
I'm all about minimum effort, minimum ingredients and maximum results. If you're having a halloween party, or attending one, I guarantee no-one will be able to resist these cute little monsters. I got my candy eyes from Woolworths, but they are stocked at most cake decorating stores and large supermarkets.
These aren't stable for long out of the fridge (mind you it is seriously hot here today!) and are best off going straight onto a plate ready to go! They will stay out of the fridge for a good hour though without completely disintegrating. Actually. Let's be honest, serve these and they won't be around in an hour!
If you can't find fried noodles, you could use a cereal like all bran, but they might not end up as crunchy!

Chocolate swamp monsters
Ingredients
- 1 pack of chang's fried noodles 100grams
- ½ cup desiccated coconut
- 2 tbsps coconut oil
- 1 block dark cooking chocolate 200grams
- candy eyes
Instructions
- Melt the coconut oil and chocolate together.
- Pour over the noodles and desiccated coconut.
- Mix well together.
- Space dessert spoon fulls of the mixture out on a tray.
- Place two eyes on each.
- Set in the fridge for an hour.

I have only made them with dark cooking chocolate- just because it melts really well.

Ermagawd, I LOVE these!! That video is hilarious as well. Your patience in cooking with the kids is refined. I am sure many kids (big and little) would love these for trick or treat!

Desiccated- thought I must have had a typo, but no! The tiny little bits of coconut in a bag normally about 500grams worth. Yes the noodles are exactly those!
