My first blog post in my new space! What do you think? Leave a comment to let me know, or even just to say "hi"! For those of you who are new- welcome. For those of you wondering why I had to move- well, I want to bring you a bigger, brighter experience. The only way to do that was to move venues. And what do you think of the logo? It's new! And as you can probably see, not designed by me. I've been working with Libby from Crimson Pear to develop something unique for this page, I hope you like it. There will be changes to colours and images on the site over the next couple of weeks while I get my head around the way it all works and how I would like it to look.
On the weekend we went to a bulk health food store and bought a whole stash of goodies. So we decided to make some fruity balls to munch on as snacks. They turned out really well and have been featuring in lunchboxes for Miss 4 all week. Nut free, gluten free and egg free, these are yummy little balls that are difficult to eat just one of!
The naming of these little goodies came from Miss 4. She's slightly frozen obsessed and went through a number of variations of Snow related names before coming up with Fruity Snowballs, I'm quite proud of her naming skills.
Fruity Snowballs
Ingredients
- 2 dates
- ⅓ cup dried apricots I use natural, no sulphur ones
- ⅓ cup sultanas
- ⅓ cup cranberries
- 1 tablespoon greek yoghurt
- ⅔ cup rice puffs
- ¾ cup cocnut
Instructions
- Put all ingredients except the coconut into a food processor and blitz until well combined.
- Roll heaped teaspoons full into balls.
- Roll the balls in the coconut.
- Keep in the fridge for up to a week.
