Jam drops, they are synonymous with childhood and a treat that I remember ever so fondly from growing up. My grandma used to make them with the leftover hand made pastry from the apple pie she made, and they were awesome. They were by no means a healthy treat, but they were really good! These healthy chia jam drop biscuits on the other hand are much healthier and they are perfect for the lunchbox.
Why bother with chia jam? Well, it's actually no bother at all! So it should be the perfect addition to these biscuits! To be quite honest, when I started experimenting with these biscuits, I was worried the jam would liquify in the oven and run everywhere...but it doesn't! In fact it's heaps less risky than normal jam drops. It's my fear of the unknown that makes me doubt myself, but I quickly realised...there's nothing to go runny in chia jam! It's all solids basically, so there isn't anything that's going to escape. So there's no need to make a biscuit well to put the jam in, they work with the jam spread on top of the biscuits and baked.
We've had two batches and Miss 6 is begging for more, so I must have done something right! I keep them in the fridge, but they could be frozen baked and whipped out to the fridge the night before for defrosting before school. These healthy chia jam drop biscuits could become your next family favourite!
Healthy chia jam drop biscuits
Instructions
- Preheat oven to 180 degrees.
- Roll out the dough and cut the shapes that you want. We went with mini hearts, because they are so cute.
- Depending on the size of the biscuits, add between ½ and one teaspoon of chia jam to the top of the biscuits shapes.
