Pesto and I go way back. It’s the ultimate in mum lunches. Especially if you have angel hair pasta in cupboard. Angela hair only takes 2 minutes to cook!! The aim with a mum lunch is to get it done super quick and make sure it’s extra satisfying. The first in the mum lunch series had such a good reaction that I’m going to do so many more of these! So this is mum lunch #2 pesto 3 ways.
As with the previous Mum Lunch, I’m giving you three options and they are based on time. The first one, well it isn’t even a recipe. It’s the ultimate in 5 minute mostly healthy food. You want something to eat while the kids are asleep that involves no extra effort? Well this is the one for you.
If you’ve got 20 minutes more time, you can roast some cherry tomatoes to go with your pasta, resulting in a really yummy lunch.
And finally, if you’re totally flush with time, then make your own pesto. It tastes better, freezes well and is wholeheartedly worth the time. In fact, my kids love it too, so it is a great thing to make and store.
