If you’re looking for a versatile lunchbox item that will use up your leftovers, is about to be made in minutes and that stands up well to the lunchbox…you need rice paper rolls.
They are so easy to make and I can prove that to you. The ones on the coloured plates in the pictures? They were made by 4 year olds. I went into Preschool as part of my role as a Jamie Oliver Food Revolution Ambassador and made rice paper rolls with 40 preschoolers. These are no-cook rice paper rolls with kids.
If you need a recipe for them here is one I prepared earlier: rice paper rolls. Now, I really don’t think you can go wrong with making these for the lunchbox. I’ve got a video in the works for them that I’ll be putting up on Youtube for you all to see.
Here’s some filling ideas:
- leftover roast (chicken, lamb, beef, pork)
- smoked salmon
- cooked prawns
- bifun noodles
- grated carrot
- mini corn
- asparagus (yes my kids eat it!)
- leftover cooked veggies
