I often try to blitz our veggie quota before dinner time so I don’t have to stress about getting veggies into tired and cranky kids at dinner time. You can bake the meatballs, or sausages too and include them in the meals that you could normally make using these things. Like curried sausages, sausage hot pot, meatball risotto etc.
One of my top serving tips: serve them with more veggies- the kids don’t think you’d be so sneaky as to serve hidden veggies and veggies on the one plate! It doesn’t have to be difficult to rebalance your family veggie intake- because these products are even loved by hard-core meatlovers (Mr Kidgredients).
Getting extra veggies into the lunchbox
I decided to get creative with the Perfectly Balanced range to see what I could come up with for lunchboxes. So, with the Beef and Carrot chipolatas I made sausage rolls (they only take 25 minutes in the oven and use puff pastry)! I popped the cooked Beef, Sweet Potato and Kale Meatballs on skewers with some extra veggies.
I did a simple “hot dog” with the Beef Carrot and Lentil Sausages, but then I also used them in a re-do of an old recipe of mine- Sausage and pea pasta sauce for a hot lunch.
