    These rice bubble monsters are so quick and easy to make. Nothing says fun more than these not-at-all-scary rice bubble monsters.  Designed to make Halloween just a little more fun, they are a no-bake treat that the kids can help to make. With only 4 core ingredients and 5 minutes, you can get a batch of these into the fridge!

    Why you're going to love this recipe

    These are fun and cute, and yes, they are a treat- which means they are much higher in sugar than many other things on my blog.  You could make them in a healthier way by using my not quite lcms recipe and styling them the same way. I love making recipes using rice bubbles and other simple things that you might have in the pantry. But there are so many reasons to love this recipe:

    • quick and easy to make
    • the melted marshmallows help to make them sweet and delicious
    • easy to style with sprinkles and eyes
    • made in a muffin pan so they are easy to get into the right shape
    • only 4 main ingredients, then decorate and colour as you wish
    • appealing to kids because of their cute factor
    • just like a marshmallow rice bubble slice, but in individual servings

    What goes into the recipe

    ingredients for rice bubble monsters: rice bubbles, butter, desiccated coconut, marshmallows
    • rice bubbles- I used kellogs brand, but you could just use puffed rice if you prefer
    • desiccated coconut- perfect for helping to keep the ingredients stuck together
    • butter- switch to coconut oil if you want to make these dairy free
    • marshmallows- I used a mixed white and pink pack- it doesn't matter
    • Food colouring- I used the natural ones made by Queen
    • Sprinkles- I like these midnight magic ones, but anything that looks cute and appeals to how you want them to look
    • Monster eyes- available in the supermarket
    • White chocolate (optional)- you can melt this to secure eyes if you want to. I just stuck them firmly into the mixture before refrigerating

    How to make this recipe

    • Melt the butter and marshmallows together on the stove over medium heat.
    • Combine the coconut and rice bubbles in a large bowl.
    • Add food colouring to the marshmallow mix to colour.
    • Pour the marshmallow mixture into the rice bubbles and mix well.
    • Fill the RACO Aerolift muffin tray with the sticky rice bubble mixture.
    • Top with sprinkles and add monster eyes.
    • Refrigerate for 3 hours or until solid, then using the edge of a silicone spatula release them from the muffin pan and serve.

    Expert Tips and FAQS

    1. Make sure you only melt the butter and marshmallows over medium heat.  Too hot and they will burn.
    2. Press down on the sprinkles when they are on top of the rice bubble monsters so they will stick in the marshmallow mixture.
    3. Use a silicon spatula to ease under the edges of the monsters to remove from the pan.
    How can I make these dairy free?

    You can swap the butter for coconut oil.  However they might not be as out-of- fridge stable, as coconut oil is quick to turn to liquid when warmed.

    Do I have to use food colouring?

    You don’t have to use food colouring, but they look super cute when green.  They also look adorable purple.

    Will these work for the lunchbox?

    Not really, as they will probably come apart. They are best stored in the fridge until just before eating.

    How do I store rice bubble monsters?

    These will store well in the fridge in an airtight container for up to 4 days.  If you need to keep them any longer, then I recommend freezing themto keep them any longer, then I recommend freezing them.

    Ingredients

    • 4 cups rice bubbles
    • 1 cup desiccated coconut
    • 100 grams butter
    • 200 grams marshmallows
    • Food colouring
    • Sprinkles I like these midnight magic ones
    • Monster eyes

    Instructions

    • Melt the butter and marshmallows together on the stove over
      medium heat.
    • Combine the coconut and rice bubbles in a large bowl.
    • Add food colouring to the marshmallow mix to colour.
    • Pour the marshmallow mixture into the rice bubbles and mix well.
    • Fill the muffin tray with the sticky rice bubble mixture.

    Notes

    Keep in the fridge until serving, can be frozen.
