I promise you, if I don’t do these Easter lunchboxes now, I won’t have these ideas to you before Easter. And I think some of these ideas are awesome, even if I do say so myself. I’ve made this super easy Easter bunny bento lunchbox with adorable bunny pastries to inspire you for the weeks ahead. I have to admit, it takes a little more effort than the bunny sushi lunchbox but it is worth it as you make a few days worth of lunchbox treats!
The first thing that I did was the boiled egg- Master 3 has just started liking boiled eggs and I really think part of that is because I’ve been making them into cute shapes, like this bunny.
Using a sandwhich cutter I made the bunny cheese sandwiches and added eyes. I think one of the things that really adds to the cuteness in this lunchbox is the grass dividers.
The mini chick is holding the popcorn and the bunny is filled with blueberries. I used a julienne grater to make the cucumber grass in this section of the lunchbox.
But the best thing about this lunchbox and the cutest part? The bunny pastries. See them hiding up the back? They are just bunnies cut into puff pastry before cooking!
Using a cutter (it doesn’t have to be bunnies). Cut the shapes out of a thawed pieces of puff pastry. Preheat the oven to 220 degrees.
Brush them with milk and bake until golden. (About 12 minutes). They will puff up dramatically. Put them on a wire rack to cool.
At this point they look like this:
Using a sharp knife, cut them through the middle and fill with: apple puree, jam, nutella, hazelnut butter, ricotta cheese and spinach, whatever takes your fancy!
