It was hot a few days ago and we had four kids running around the house. We had planned a swim, but the weather turned against us and we suddenly found that it was awfully humid and the kids were still hungry. So, I brought out these ice blocks that I'd made the week before and they calmed them down for 15 minutes whilst they ate them and while we enjoyed a bit more peace and quiet.
These are so easy to make that you really have no excuse to buy zooper doopers or other sugar laden ice blocks for the kids! It takes less than 5 minutes to blitz, fill and pop in the freezer...and then only about 4 hours to freeze them. That's the beauty of these reusable silicone molds- they freeze really quickly!
Use what you've got, these are watermelon and coconut water, but choose your favourite fruit, favourite juice blitz! I found using my Kambrook Blitz to Go (I was sent this to use so it was a freebie- but my opinions are honest) made this even easier than my usual blender because of the pour spout on the bottles. I've made them before with my usual blender and then poured into a jug, then poured into the moulds. Meaning more washing up- something I seriously dislike.
These iceblocks are really yummy and the coconut isn't overpowering, which means even ardent coconut dislikers will enjoy them. I'm thinking of doing a batch with mango as it marries really well with the coconut water too!

Watermelon and Coconut Ice Blocks
Ingredients
- 2 cups chopped watermelon
- 1 cup coconut water
Instructions
- Blitz the coconut water and watermelon together.
- Pop into ice block mold and freeze for four hours minimum.
