Here’s the second week of our lunches at Kidgredients, a little later than anticipated as I’ve been at ethics training all weekend and been unwell. But here goes. I had lunch this week on Saturday too, so you’ll see that here too! Here’s the Week of lunchboxes Week 2.
Monday: with two kids of to preschool and school, lunches are fun to do on a Monday morning.
Lebanese bread wraps with leftover bbq chicken, lettuce, cucumber and carrot. Leftover cooked carrot and broccoli. Lavosh crackers and cheddar cheese. Why do we use lebanese bread? Well, it freezes really well and unlike some other wraps contains no nasties.
Tuesday two kids again!
Sandwiches! We’ve taken to roasting two chickens on a Monday or even Sunday and using the meat for lunches. It saves us from buying ham and also chicken is so versatile for lunches! These sandwiches are chicken, cheese and lettuce on wholemeal bread. There are also some baked pancake bites in there too!
Wednesday…two kids for the last time of the week!
More lebanese bread wraps, this time chicken and mayonnaise, some baked pancake bites in the yumbox minisnacks. Cloud jellies with the wraps from the new easier recipe for them I’ve just updated.
Thursday…just Miss 6!
Rice paper rolls are a quick and easy way to get lunchboxes out the door in the morning! Cloud jellies and pancake bites.
Friday…the last day normally of the week…
So….she only got half of this bread roll, with tuna and mayo…because have you EVER seen a roll this big? Two date and banana mini muffins and some cloud jellies without enough gelatin…so basically a yoghurt berry smoothie with gelatin.
Saturday. So I was off to a course…and they recommended we pack our own lunch so I did.
Deconstructed nachos. With pulled pork and mission chips, and my much needed sour cream. And a naughty…but oh so nice brownie.
