Ingredients

eggs
▢

cup
milk
▢

cup
quick oats
▢

cup
self raising flour
▢
½
teaspoon
baking powder
▢
1
cup
raspberries
defrosted and mashed
▢
1
teaspoon
vanilla paste
▢
coconut oil spray
Instructions
Mix the eggs, milk, oats, flour, baking powder, raspberries and vanilla paste into a large bowl until combined.
Don't overmix as they will become tough.
Preheat your frypan over medium heat and spray with coconut oil. Spray your egg rings if you are using them (read the post to find out why I do).
Place tablespoons of the mixture into the egg rings or straight into the pan.
Cook until bubbles appear, then flip (if you are using egg rings remove them before flipping).
Continue cooking until golden.
Remove and enjoy!
Notes
Freeze flat on a tray and then transfer to a container or ziploc bag.
