Ingredients

of self raising flour

of desiccated coconut

maple syrup

tin of sweetened condensed milk

pulp of one mango
(approx 150 grams)

passionfruit pulp

Instructions
Preheat oven to 180 degrees celsius 355F
Line a 20 by 20 cm square baking tin (or use a silicone one)
Combine the flour, coconut and maple syrup in a large bowl.
Pour in the butter and mix well.
Press into the base of the baking tin.
Bake for 12 minutes, until firm and golden.
to make the topping, combine the mango pulp and condensed milk in a blender.
Blitz until pureed and smooth.
Stir through the passionfruit.
Pour this mixture over the hot base of the slice and return to the oven for 15 minutes or until just firm.
Cool on the bench for 10 then refrigerate until cold.
Cut into bars and serve cold.
