Ingredients

head cauliflower
blitzed

clove
garlic crushed

onion
diced

zuccchini
chopped into chunks

carrot grated

tins diced tomatoes

basil

Instructions
The first thing you want to do is blitz the cauliflower to be the consistency of mince meat.
Add the olive oil to your sauce pan and saute the onion and garlic together until soft.
Add the cauliflower and cook for 2 minutes.
Pop the zucchini and carrot into the pan and add the diced tomatoes.
Cook for 15 minutes, or until sauce has thickened.
Add the basil and stir through.
