In a large bowl, combine the mince, eggs, zucchini, cheese, bread crumbs and herbs.
With wet hands, form into 16 even sized balls.
Pop them on an oven tray.
either cook in batches in a fry pan until cooked through with a little olive oil. Or par fry to brown and cook for 20 minutes at 180 degrees celsius. Or use a bbq (the cleanest option)!

Best rissole tip:Forming rissoles- you will make them easiest if you have wet hands. Get the mix all combined, then grab a tray to put the rissoles on, and grab handfuls to shape.To freeze: place on a tray and freeze until solid and them move to a container.
