Sweet potato and apple fritters are perfect for a dinner side, baby led weaning or even in the lunchbox. Freezer friendly, kid friendly and super yummy.
500gramssweet potatopeeled, diced and cooked until mashable
2large applesgrated
1egg
1cupself raising flour
½teaspoonground sage
Olive oil for frying
Instructions
Grate the apple into the mashed sweet potato.
Add the sage, flour and egg.
Mix to combine well.
Heat the olive oil over medium-high heat.
Fry tablespoonfuls of the mixture over medium- high heat until golden.
Serve hot or cold.
Notes
Perfect for freezing for lunchboxes, just freeze on a tray until solid and then transfer to a container. Want to make these gluten free? 1 ⅓ cups quinoa flour works well with 2 tsps baking powder.Swap the ground sage for: cinnamon or paprika
