Ingredients

desiccated coconut
Instructions
Preheat oven to 180 degrees.
In a mixer, cream the butter and sugar together.
Add the egg and beat until incorporated.
Add the flour and coconut and mix by hand until well combined.
Roll teaspoonfuls of the dough into balls, then squash onto a baking tray to make discs of the dough.
Bake at 180 degrees for 15-18 minutes, or until golden.
Cool on a wire rack.
Notes
These can be frozen! Pop straight into the lunchbox from the freezer.
