Ingredients

olive oil

chicken breasts
each one cut through the middle to make 2 pieces of equal thickness

gram
pack chopped frozen spinach
defrosted or use fresh baby spinach and blanch and chop
▢
1 250
g
ball mozzarella
cut into .5cm thick slices

sugo or basil tomato pasta sauce/ passata
Instructions
Heat the olive oil in the pan over medium heat
Cook the chicken breasts until golden on both sides.
Top with the spinach and mozzarella.
Pour the sauce around the chicken breasts, so it is just touching the mozzarella, for presentations sake, try not to get any sugo on top!
Put a lid on the pan and cook for 15 minutes or until the mozzarella is completely melted.
Serve from the pan with extra sauce poured around for dipping bread into it.
