Ingredients
▢
4
full cobs of corn
remove kernels with a sharp knife (if you're using frozen kernels approx 300grams worth)

tablespoon
soy sauce
use tamari for gluten free
▢

spring onions
thinly sliced
▢
½
a small red chilli
seeded and chopped
▢
1
clove
garlic
minced
▢
½
a bunch of coriander
leaves only, finely chopped
▢
¾
cup
rice flour
use plain if you like
▢

eggs
lightly whisked
▢
⅓
cup
water
▢
olive oil for frying
Instructions
Combine all the ingredients except the water in bowl, mix together.
Add the water, mix well.
Leave to sit for 5 minutes.
In a frypan over medium heat heat the olive oil.
Add tablespoonfuls of the mixture to the frypan. If you're doing for lunchboxes use teaspoonfuls.
Cook for 3-4 minutes each side.
Drain on paper towel after frying and serve hot or cold.
Delish with sweet chilli sauce.
