Ingredients

strained passionfruit pulp
approximately 6 fresh passionfruit
▢

cup
shredded coconut
▢
½
cup
puffed rice
not rice bubbles
▢
½
cup
coconut flour
▢

teaspoon
honey
▢

tablespoon
coconut oil
melted
Instructions
Using a sieve, strain the passionfruit. Discard the seeds and try to get as much juice as you can from the passionfruits.
Add all the ingredients to a food processor and blitz until it is smooth and thick.
Remove tablespoonfuls of the mixture and shape (not really roll- sort of press) into balls. Alternatively press into icecube trays.
Set in the fridge for an hour.

Freeze on a tray then transfer to a container
