Lemon madeleines, low sugar
Lemon madeleines are perfect for afternoon tea, sweet enough but also packing in the lemon! A delicious treat that's a cross between a cake and a biscuit. Low sugar.

Ingredients

self raising flour

lemon juice

zest of 2 lemons

Instructions
Preheat oven to 180 degrees Celsius (355 F)
In an electric mixer, combine the eggs, vanilla and sugar, lemon zest and lemon juice. Beat until thick and pale.
Fold the flour gently through the mixture with a wooden spoon.
Add the butter and gently fold through.
Spoon evenly into a 12 hole madeleine pan. (this makes 24)
Bake at 180 degrees for 8-10 minutes, watching they don’t burn.
Cool in the pan for 5 minutes before turning onto a wire rack to cool.
Dust with icing sugar.
Notes
They will keep well in an airtight container, or freeze for longer term storage.
Delicious for breakfast!
