Ingredients

sweet potato
chopped into 2cm rounds

zucchinis
chopped into 2cm rounds

onion
chopped into 8ths

red capsicum
sliced into 2cm slices

chicken drumsticks
(approx 1.5kgs)

olive oil

sprigs
rosemary
removed from the stem and roughly chopped

tablespoon
salt flakes

tablespoon
honey
Instructions
Preheat your oven to 200 degrees celsius.
Chop your zucchini and sweet potato into 2cm rounds (check out the process shots in the post)
Chop the onion in half, then chop each half into quarters. Slice the capsicum in 2cm wide slices. Rip the rosemary leaves off and roughly chop.
Put the onion, capsicum in the bottom of the pan.
Add the zucchini and sweet potato rounds, drizzle on 1 tablespoon olive oil, sprinkle with ½ of the salt and sprinkle with ⅓ of the rosemary.
Coat the chicken drumsticks in the remaining oil. Rub paprika all over them.
Place the chicken drumsticks on top of the veggies and sprinkle with rosemary. Drizzle the honey all over the top, focusing on the chicken drumsticks.
Bake at 200 degrees celsius for 45 minutes.
Notes
No fresh rosemary?
Swap it for 1.5 tbsps of dried. Other herbs could also be used like thyme, oregano, marjoram.
Swapping the oil?
You can use vegetable oil or rice bran oil instead of olive oil.
Want to use chicken breasts?
Depending on their size, you might need to adjust the cooking time down.
