Ingredients

Quorn mince
fresh or frozen- it’s two packs
▢

olive oil

bay leaf

litre vegetable stock
▢

plain flour

Olive oil spray.
Instructions
Preheat oven to 180 degrees
In a large sauce add the olive oil and the onion, cooking for 2 minutes until soft.
Add the Quorn Mince, carrot and zucchini and fry for 5 minutes.
Add the tomato paste, bay leaf and the flour mix to combine well.
Add the stock and bring to the boil.
Cook the sweet potatoes and potatoes using your preferred method until mashable.
Add the milk and butter to the potatoes and mash them well.
Place the mince mixture into a large high baking dish and top with the mashed potatoes, using a fork to make swirls.
Spray with olive oil and bake for 20 minutes or until golden.
Serve hot.
