1cupcooked quinoait's about half a cup before cooking
1cupcheddar cheese
1teaspoonitalian herbs
garnishes: tomatoesmushrooms, baby spinach, broccoli (you only need a tiny bit of each- like a ¼ cup. You could also choose to put ham, parmesan cheese, salami etc on top)
Instructions
Preheat oven to 180 degrees.
Mix the eggs, cheese, italian herbs and quinoa together with a whisk.
Pour into a 12 muffin pan.
Top with your chosen toppings.
Bake for 15 minutes at 180 degrees.
Notes
Freeze on a tray then pop in a container. Defrost overnight.
