Ingredients

small new potatoes

rasher of bacon
thinly sliced
▢

spring onions
thinly sliced
▢

tablespoon
butter
▢

teaspoons
wholegrain mustard
▢

cup
grated cheddar cheese

sour cream

chopped dill
Instructions
Preheat oven to 200 degrees.
Boil, or steam your potatoes until tender.
Cook bacon until crispy in a frypan over medium heat.
Cut a slice from the top of the potatoes, then using a teaspoon, hollow out the flesh.
Mash the potato flesh with the butter, sourcream, mustard, spring onion, 1 tablespoon dill and half of the cooked bacon.
Place the hollowed potatoes in a baking dish and fill with the mashed mix.
Top with the remaining bacon.
Bake for 20 minutes at 200 degrees.
Sprinkle with the remaining dill and serve
