Ingredients
Papaya salsa

diced

yellow capsicum

spring onions
thinly sliced

red chilli
finely diced (optional)

Juice of 2 limes
Papaya chicken tacos

ripe papaya
peeled, seeded, pureed

teaspoon
paprika
▢

teaspoon
dried oregano

ground cumin

Instructions
Salsa:
Combine all ingredients in a large bowl.
Papaya Chicken Tacos:
Heat the olive oil in a medium pan over medium heat.
Add the onion and cook until soft.
Add the paprika, oregano and cumin, cook for 30 seconds or until fragrant.
Add the chicken breasts and coat in the spice mix.
Cook until browned on all sides.
Add the papaya puree and cook a further 10 minutes or until
heated through.
