Ingredients

olive oil

spring onions
thinly sliced

rashers middle bacon
diced

chicken breasts diced into 2cm cubes

tin creamed corn

zucchinis
finely grated

chicken stock

frozen corn kernels

short cut angel hair pasta

egg lightly whisked

parsley for garnishing
Instructions
Heat the olive oil in the base of a large saucepan or stock pot.
Add the bacon, spring onions and diced chicken and cook for 5 minutes.
Add the creamed corn, grated zucchini and chicken stock.
Bring to the boil, then simmer 10 minutes.
Add the pasta and cook 3 minutes more.
Slowly add the egg to the soup, stirring as you go.
Remove from the heat and serve, garnishing with parsley for those who like parsley!
