    I’m all about making weeknight meals easier and this dish does just that! My special veal parmigiana is set to become a family favourite and is all about cheating where you can to make an amazing family meal.

    I don’t know about you, but the rules for weeknight dinners around here are: quick, tasty and kid-friendly. So, to satisfy all those criteria I use a sneaky sauce here and there. In this recipe, I’ve used Heinz Spicy Capsicum and Tomato Pasta Sauce- because it adds so much flavour to this dish.

    Heinz Spicy Capsicum and Tomato Pasta sauce is really versatile, don’t just use it with pasta! This special veal parmigiana is a prime example of how to use it in other ways. The thick and rich sauce adds so much flavour to this dish and perfectly complements the veal and the veggies.

    My kids love meals like this one, I make a similar dish to this parmigiana which is chicken campagnola (I recently tried it with the Heinz Spicy Capsicum sauce and that makes it so much quicker!) and the kids love it.

    Dishes like this that are “all in one” are perfect for minimising clean-up. The great news is that it also contains quite a few veggies, so we are cramming in the good stuff. But that doesn’t mean not serving it with veggies too- in fact, that helps the kids to eat the ones you’ve hidden.

    What’s not to love about oozy cheese? The mozzarella melts into the sauce and becomes oozy and gooey and is quite the spectacle to serve up! Serve it at the table with the kids watching to hear them “ooh” and “aah” about the cheese. Make sure you have some crusty bread handy for the extra sauce.

    The veal remains super tender thanks to the grated zucchini and the sauce and doesn’t dry out. Make sure before you start cooking that you have chosen a pan with a lid as it is essential to making the cheese melt!

    This special veal parmigiana is the perfect midweek meal!  Delicious, filled with veggies and covered in oozy cheese, it's set to become a family favourite.

    Ingredients

    • 4 tbsps olive oil
    • 8 slices of eggplant
    • 1 zucchini grated
    • 4 veal steaks
    • 8 basil leaves
    • 2 large Bocconcini sliced
    • 1 jar Heinz® Tomato & Spicy Capsicum Pasta Sauce

    Instructions

    • Heat the oil in the frypan over medium heat.
    • Add the eggplant slices and cook until golden brown. Remove.
    • Fry the veal until golden on one side.
    • Place a dollop of the sauce in the bottom of the pan.
    • Place the veal steaks in the pan.
    • Top with the basil leaves.
    • Add the grated zucchini, then the fried eggplant.
    • Top with the bocconcini.
    • Add the rest of the sauce to the pan, around the veal.
    • Cover and cook until the cheese is melted and the sauce is bubbling.
