So, I posted a photo of these last week on instagram and I think you all wanted the recipe, not entirely sure, but it is my most liked photo! ;-). Anyway. Mr Kidgredients doesn't like mashed potato. Say what? No mashed potato? So I decided to get creative with....you guessed it...mashed potato. Surely if it doesn't look or taste like mash it isn't mash, right?

Why you're going to love this recipe
It will sound like I'm sounding my own trumpet, but the flavours in these are just perfect. You know how sour cream and chives go together like Romeo and Juliet...well add some cheese into the equation and you've got the greatest marriage of all time.
There's nothing nasty in these, they freeze well and could easily replace wedges or something similar at dinner. I used a lovely organic mature cheddar that I buy at believe it or not...Costco! But similarly they would be awesome with any cheddar or hard cheese that melts well (think jarslberg, gouda etc).
Now I had grand visions of shaping these into animals...but they aren't quite the right consistency. If you roll them into balls, they flatten but they get perfectly crisp around the outside and remain soft and luscious on the inside. I have to say my main goal was to get these into the mouth of Master 2. I failed. Maybe had they been cutely shaped they would have been eaten. But I'm also going to bet that probably wouldn't have changed the situation. Over-tired kids and new foods don't mix. But more about that some other time!

5 ingredient potato puffs
Ingredients
- 5 large potatoes peeled and cooked until mashable
- 4 heaped tbsps sour cream
- 2 tbsps chopped chives
- 1 cup grated hard cheese
- olive oil for drizzling
Instructions
- Preheat your oven to 200 degrees.
- Mash the potatoes and combine with the cheese, sour cream and chives.
- Roll heaped teaspoonfuls into balls.
- Place on a lightly oiled oven tray (I used a silpat liner).
- Bake for 20 minutes or until crispy on the edges.
