We love waffles, they are so yummy! But how can we make them healthier? Wholemeal and lower in sugar, these are the best ever healthier waffles. They are delicious with whatever you top them with, but I'm loving macadamia icecream right now (obviously that's not a good breakfast choice).
You could have these for a special breakfast, top them with fruits, vanilla yoghurt and some seeds and nuts for crunch and you're set. They do contains sugar, but the amount is far less than most breakfast cereals, and on a special morning...that's ok!
Double batch these and freeze if you want to make them in advance or have them for an easy midweek dessert. They freeze well, pop them on a tray to freeze until solid, then transfer to a bag or container as they won't stick to each other then! To defrost them pop them in the fridge, and reheat if you want them hot back in the waffle maker they only take a couple of minutes to reheat and this helps to re-crisp them after defrosting.
If you haven't got a waffle maker, get one from Kmart, they are super cheap and for the number of times you will use it, it's pretty good. I on the other hand have this Breville Waffle Maker (this is an affiliate link and I earn a small commission if you purchase from it). I bought it 4 years ago and it's still going strong. And I absolutely love it. Doing 4 waffles at once is a game changer! It means you have so much time to get them done. But it is expensive if waffles are a rare treat for you.

Ingredients
- 2 eggs
- 1 ⅔ cups milk
- ⅔ cup oil
- 2 teaspoons vanilla
- 1 cup wholemeal self raising flour
- 1 cup plain self raising flour
- ¼ cup coconut sugar
- toppings: icecream fruit, whatever you like!
Instructions
- Combine the wet ingredients in a jug.
- Combine the dry ingredients in a bowl.
- Add the wet to the dry and mix well.
- Cook as per your waffle maker instructions.
