- passionfruit pulp- use a tin- it makes this recipe so easy and able to be made year round! If you would prefer to use fresh passionfruit or have a glut of them, you will need three for this recipe.
- pineapple juice- for extra tropical flavour and pineapple and passionfruit are a match made in heaven
- desiccated coconut- to keep it all together, it works to bond everything together in the baking process
- sweetened condensed milk- for the sweet creamy top make sure you use the normal one, not lite
- digestive biscuits- because this needs to be quick and easy! These form the slice base. Any bits of crushed biscuits go in as well.
How to make this recipe
This recipe is super simple!
- First, space the biscuits around the base of your lined slice pan (baking tray).
- Fill the gaps by breaking up some of the biscuits. It doesn't have to be perfect! Any bits of crushed biscuits go in as well. That's the bottom layer done!
- Whisk together the coconut, passionfruit pulp, pineapple juice and sweetened condensed milk in a large bowl. Making sure you stir it really well.
- Pour this mixture over the biscuit base. Drizzle in the last little bits, make sure to use a teaspoon to get every single passion fruit seed into the mix!
- Bake at 160 degrees celsius (fanforced), or 180 degrees celsius without a fan (355f) for 20 minutes, or until the top has set and is bubbly.
- Remove from the oven and refrigerate for 8 hours.
- Slice into squares and eat!

- 12 digestive biscuits
- 170 grams passionfruit pulp in syrup
- 150 mls pineapple juice
- 790 grams sweetened condensed milk 2 tins
- 85 grams desiccated coconut
Instructions
