My kids love frittatas and they are so quick and easy to make. These bacon and egg frittatas are perfect for breakfast or even for a lunchbox snack. They freeze really well and a great for grab and go for packing in the lunchbox.
What is a frittata?
Basically a frittata is a crustless quiche and quiches are a favourite for kids. My kids love them for breakfast if you've got a rushed morning like we do when we go to band or when we have other things on before school it means that you can pop them out of the freezer the night before and the kids can eat them cold for breakfast.
Bacon cheese and eggs work so well together these super quick to make. All you need is a jug, an oven and a muffin pan and you're done. You could eat these on toast or just as they are. Pair them with some tomato cucumber and carrot and you've got a healthy lunch.
Can I freeze these?
I like to keep them small it means that they are easy to store in the freezer and they're also easy to pop in the lunchbox. Making them in a muffin pan means that there's minimal clean up and the muffin pan can go straight in the dishwasher. For these I like to use a silicone muffin pan as it's easy to remove them.
To store in the freezer I pop them out and freeze them on a tray. Once solid I transfer them to freezer bag or containers this means they won't stick to each other and it easy to get out when you want them.
Change it up!
This is a super simple recipe if you wanted to add more to it you can just make sure if you add too much dry stuff that you'll need to add more eggs.
They also perfect for picnics or brunches it's up to you really... gosh we've had them for dinner.

Bacon and egg frittatas
Ingredients
- 6 eggs whisked
- 1 cup grated cheese
- 2 tbsps thickened cream
- 2 rashers bacon diced
Instructions
- Preheat the oven to 180 degrees celsius.
- Whisk together the eggs and cream.
- Mix in the bacon and cheese until well combined.
- Spoon into a 12 pan muffin pan-either silicone or non stick.
- Bake at 180 degrees celsius for 15 minutes.
- Cool in the pan for 5 then tip out to a wire rack.
