After a week of having both kids at home all the time, I started craving sweet things, because there just wasn't enough coffee to get me through the day! I decided to clean out the fridge in the hope that some chocolate would appear somewhere. It didn't. But what did appear was a jar of mayver's hazelnut spread that was about to expire. That's how these mini muffins came to be, choc hazelnut mini muffins for the sweet (but less guilt) treat win!
The choc chips in these are dark and the hazelnut spread contains no sugar...and there's so added sugar in these either, so they are good for those of you that are watching the sugar you eat. They do however contain nuts and so aren't okay for school or daycare. But as a sweet treat for people without allergies, they are awesome!
Let's be honest, hazelnuts and choc chips...they are meant to be. Ferrero rochers are a prime example of this. When you combine the two flavours to make these choc hazelnut mini muffins you won't be disappointed!
If you wanted to make these super naughty, just switch the healthy mayvers spread for nutella, it will make the muffins much sweeter, but doesn't really effect the texture. It will however make them darker in colour.
These will freeze well too and will be handy for those times when you are dashing between school and the next activity and um...eating in the car. Make sure you pack an extra one or two for yourself.

- Strawberry choc chip mascarpone muffins
- Sweet potato choc chip muffins
- Banana choc chip mini muffins, egg free, no extra added sugar
Choc hazelnut mini muffins
Ingredients
- 2 cups self raising flour
- ½ cup coconut oil melted
- 1 egg
- 1 cup milk
- ¾ cup choc chips
- 2 tbsps mayvers hazelnut spread
Instructions
- Preheat oven to 180 degrees.
- Combine all the ingredients, then spoon into mini muffin trays.
- Bake at 180 degrees for 15-18 minutes.

I can't find any Mayver's hazelnut spread. Would Nutella or another hazelnut spread work as a substitute?

Just tried a double batch of these to freeze, hoping to get organised before school starts. Couldn't find Mayvers choc hazelnut so used their Cacao superfood spread instead. Also used 90pc dark choc chopped up in place of choc chips. They didn't turn out well at all. The texture is too chewy and sticks to the sides of your mouth and not even vaguely sweet.

They didn't turn out well as you used entirely different ingredients. I test my recipes 3 times, but I don't try out random substitutions! I'm sorry they didn't work for you.
