    So, there's no shame in admitting it, I love chicken wings. I've been giving then to the kids for a few years too so they are used to eating them and love them. I think they are delicious, and in so many ways. But one of our favourite ways to eat them is lemon and oregano baked chicken wings.

    Because chicken wings are cooked in only 40 minutes, they are awesome for weeknights and because they pack in the flavour of a whole chicken due to the bone being in and the skin being on, they are fantastic for getting a roast flavour but without the work or the time that's needed for a roast.

    This marinade is our favourite one for chicken and works just as well on chicken breasts or thighs, just adjust the cooking time to suit. If you're not time poor, then these are even better when left to marinade, but don't stress if instead they are a mix and bake dish for you.The flavours of these wings work well with so may sides, we had roasted sweet potato, some broccolini and some multicoloured carrots. They are also yummy as a starter or served with crunchy wedges.

    Now here's a confession, it's been a long time since I last cooked chicken wings...why? Because they are normally Mr Kidgredients' domain. He cooks them in a ring in the weber bbq and they are amazing, but a lot more time consuming. Generally speaking, that's a weekend thing because, lighting the coals and doing all that isn't really a weeknight thing for me.

    The chicken wings are also easy to put into the lunchbox the next day, especially when they are like these ones and don't have wing tips. The crunchiness of the outside makes them delicious for little hands and the fact that you get to eat with your fingers makes them perfect kid fodder.

    Ingredients

    • 1.5 kgs chicken wings
    • ¼ cup olive oil
    • ¼ cup lemon juice
    • 2 cloves garlic crushed
    • 2 tsps dried oregano

    Instructions

    • Preheat the oven to 180 degrees celsius.
    • Mix the marinade ingredients together and pour over chicken wings.
    • Either marinade for up to 4 hours...or pop in an oven dish and bake at 180 degrees for 40 minutes.
    • Serve with veggies!
