    Lemon fridge slice, no bake yumminess

    This is a treat. It's a mighty delicious, super yummy treat. It's my lemon fridge slice, that I've been making since I first started "cooking". It doesn't need to be baked, but as the name suggests, it does need to be kept in the fridge!

    Packed with veggies. NOPE. Packed with sugar. It's a treat, people! And everyone needs a little sweetness in their life. So trust me, it's so delicious, you will wish you could eat it every day. Actually, you'll probably find yourself trying to work out how many times around the block you need to run to compensate for a piece.

    Classic flavours

    Eating this takes me back to my childhood as my grandma made this for me when I was little. I spent a lot of my time at her place when I was growing up, and a lot of time licking the wooden spoon right next to her on the bench. Lemon combined with coconut was one of her favourite flavours!

    No bake

    It's perfect to whip up for people coming over, you don't even need to turn on the oven! If you're cheeky like me, do the melting in the microwave. The best part about it, is you set it in a container, so you can then just chop it up and return it to the container.

    Substitutions

    • condensed milk- coconut condensed milk! It actually adds a really delicious flavour
    • butter- coconut oil

    Do I need a food processor?

    Keen to get started? I blitzed the biscuits in my food processor, but you don't need one. However crushed your biscuits turn out doesn't matter, because it just adds to the crunch of the base!

    Ingredients

    Base

    • digestive biscuits crushed
    • shredded coconut
    • condensed milk
    • vanilla paste
    • lemon juice
    • zest of 2 lemons
    • butter unsalted

    Icing

    • icing sugar
    • lemon juice
    • butter melted (unsalted)
    • shredded coconut

    Method

    • Combine all of the base ingredients in a large bowl and mix well to combine.
    • Press into a lined slice container.
    • Refrigerate.
    • Combine the topping ingredients (except coconut) in a bowl and mix well to combine.
    • Pour over the base.
    • Top with shredded coconut.
    • Refrigerate for 3 hours before slicing.

    Freezing and storing

    This slice will keep well in the fridge for a week. It can also be frozen, just put it in the fridge the night before you want to eat it.

    This yummy lemon fridge slice is the best treat ever! Deliciously tangy, and super sweet its only downfall is you have to keep it in the fridge. But it's no bake!

    Ingredients

    Base

    • 400 grams digestive biscuits crushed
    • 1 cup shredded coconut
    • 1 tin 395g condensed milk
    • 1 teaspoon vanilla paste
    • ⅓ cup lemon juice
    • zest of 2 lemons
    • 200 grams melted butter unsalted

    Icing

    • 2 cups icing sugar
    • ¼ cup lemon juice
    • 50 grams butter melted (unsalted)
    • shredded

    Instructions

    • Combine all of the base ingredients in a large bowl and mix well to combine.
    • Press into a lined slice container.
    • Refrigerate.
    • Combine the topping ingredients (except coconut) in a bowl and mix well to combine.
    • Pour over the base.
    • Top with shredded coconut.
    • Refrigerate for 3 hours before slicing.
