Dinner. Every night. You've got this! This one pan chicken and veggie bake with honey and rosemary is set to become a family favourite! Chicken drumstick recipes are always kid friendly, especially when they contain honey! Nothing beats holding onto your food! These chicken drumsticks are the perfect family dinner, and because they are done in one pan with the veggies, there is minimal washing up!
I hate washing up. I hate it with a vengeance. So I design my recipes around minimal clean up and this delicious one pan chicken and veggie bake is no exception.

What's not to love about chicken drumsticks and veggies? The awesome thing about this meal is not only does it look good, it also tastes great and is gluten and dairy free. The great thing about this recipe (apart from the one pan to wash up) is the fact that it's self saucing. By putting the onions and the capsicum in the bottom of the pan, all the juices from the above things, like the sweet potato, zucchini and chicken run down, making the bottom of the pan a thin gravy like sauce which is positively delicious! Don't forget to spoon it over the top before serving.

What goes into the recipe
- 8 chicken drumsticks
- 500 grams sweet potato, cut into 2cm rings
- 2 zucchinis, cut into 2cm rings
- 1 onion, halved, quartered (meaning you cut it into 8ths!)
- 1 red capsicum, sliced into 1.5 cm thick slices
- 3 tbsps olive oil
- 2 tbsps sweet paprika
- 3 sprigs rosemary
- 3 tbsps honey
How to make this recipe
It's so simple!
- Preheat your oven to 200 degrees celsius.
- Chop your zucchini and sweet potato into 2cm rounds (check out the process shots)
- Chop the onion in half, then chop each half into quarters. Slice the capsicum in 2cm wide slices. Rip the rosemary leaves off and roughly chop.
- Put the onion, capsicum in the bottom of the pan.
- Add the zucchini and sweet potato rounds, drizzle on 1 tablespoon olive oil, sprinkle with ½ of the salt and sprinkle with ⅓ of the rosemary.
- Coat the chicken drumsticks in the remaining oil. Rub paprika all over them.
- Place the chicken drumsticks on top of the veggies and sprinkle with rosemary. Drizzle the honey all over the top, focusing on the chicken drumsticks.
- Bake at 200 degrees celsius for 45 minutes.

I've used a big le chasseur roasting pan (affiliate link) for this, it's 46cm by 26cm wide. You need something this big! But it can be pyrex, ceramic, cast iron or whatever you prefer. I love this pan because it's so big and the cast iron helps with heat conductivity.
Stick to the sizes of the veggie pieces in the pictures! Or they won't cook through. Make sure you preheat the oven- the chicken needs it hot!

Notes
- No fresh rosemary? Swap it for 1.5 tbsps of dried. Other herbs could also be used like thyme, oregano, marjoram.
- Swapping the oil? You can use vegetable oil or rice bran oil instead of olive oil.
- Want to use chicken breasts? Depending on their size, you might need to adjust the cooking time down.
