Christmas is the one time of year when I go a little crazy. Thankfully it only lasts for one month. This chocolate marshmallow Christmas slice is perfect for share parties and contains no egg!
How do you get the look of meringue on top without using egg? Well, you make marshmallow, that's how! I always thought marshmallow was super hard to make, but it's not. I have done it two ways just to test my method, once in my Magimix Cook Expert, and once in the food processor. Both methods are super simple.
I have a child who hates marshmallow. And he loves this slice. It's probably the sprinkles. I wouldn't make this to keep at home, it's definitely a shared thing because nobody needs this much sugar hanging around in the fridge!
And I won't even pretend that this is healthy because it isn't. And that's ok because nobody wants to be that person who brings something that won't be eaten to a class party! It's fun and delicious.
This is super easy to make, mix up the base and bake, then add the marshmallow topping. And set in the fridge. Make sure you put the sprinkles on while the marshmallow is hot or they won't stick.
When you're slicing this, make sure your knife is super clean and be ready to peel the marshmallow from the edges of your pan, or even insert a spatula between the marshmallow and the cake pan to separate first.
I used a silicone square pan to make this, and it was easy to remove. If you're making this and using a metal tin, I recommend putting baking paper right up the sides so that when you add the marshmallow it is easily removed.
It can easily be made in advance too, so is perfect for making pre-Christmas for a dessert on Christmas day.

Chocolate marshmallow Christmas slice conventional method
Ingredients
Chocolate slice
- 130 grams butter
- 2 tablespoon golden syrup
- 150 grams brown sugar
- ½ teaspoon bicarbonate of soda
- 1 teaspoon vanilla
- 30 grams cocoa
- 125 grams plain flour
- 75 grams oats
- 30 grams desiccated coconut
marshmallow topping
- 140 grams white sugar
- 50 ml cold water
- 1.25 tsps gelatine
- 50 ml boiling water
- 1 teaspoon vanilla paste
- ¼ cup sprinkles
Instructions
- Preheat oven to 180 degrees.
- Line a square 20cm cake tin or use a silicone one. Make sure the baking paper comes right up the sides.
- Combine the butter, brown sugar, golden syrup in a small sauce pan and bring to the boil.
- Add the bicarb and the vanilla. Remove from the heat.
- Combine the flour, oats, coconut and cocoa in a large bowl and pour the hot mixture over the top.
- Mix well. Then press into the cake tin.
- Bake for 25 minutes at 180 degrees.
- Remove from the oven and allow to cool slightly.
- Combine the sugar and cold water in the bowl of an electric mixer and set to top speed.
- Whisk for 3 minutes.
- Add the gelatine to a small bowl with the boiling water and whisk to combine before pouring into the mixer. Add the vanilla paste.
- Whisk for another 3 minutes until thick and glossy.
- Pour over the cooled slice and top with sprinkles.
- Place in the fridge for 4 hours to set.

- 50 ml boiling water
- ¼ cup sprinkles

- Preheat oven to 180 degrees celsius.
- Line a metal square 20cm cake tin or use a silicone one.
- Place the butter, golden syrup and brown sugar in the metal bowl of the Magimix Cook Expert. Expert mode: Time 3 minutes, Speed 3 100 degrees celsius.
- Add the bicarb and vanilla and do expert 10 secs, Speed 3, 0 degrees celsius.
- Add the oats, cocoa, flour and coconut and Expert: 1 minute, Speed 3, 0 degrees celsius.
- Pour into the tin and bake for 25 minutes at 180 degrees celsius.
- Allow to cool slightly.
- Combine the cold water and sugar in the metal bowl and attach the whisk.
- Expert mode: speed 7 for 5 minutes at 0 degrees.
- Combine the gelatine and boiling water in a small bowl and whisk to dissolve.
- Add the gelatine mix and vanilla to the sugar and water mix and expert: time 10 minutes, speed 7. Or until thick and glossy.
- Pour over the slice and sprinkle with the sprinkles set in the fridge for 4 hours.
