What equipment do I need?
We’ve kept it super simple, a RACO saucepan (this 1.9L one is the perfect size) and a RACO Aerolift muffin pan are all you need to make these adorable rice bubble monsters.
Why Aerolift? Um. Quite simple. It is the best non-stick range you will find for things like this! I know when I put these rice bubble monsters in the pan to set that they will be easy to get out! Aerolift is non-stick to the extreme, made by RACO it is designed for even the stickiest, messiest muffins, loaves and frittatas slide out. I can say that because I have put these through the wringer!
Whether you are baking a herby loaf or a set of blueberry muffins, I have not had a fail once with RACO Aerolift. And I do a lot of baking. Plus I use them for other things when I can’t be let down, like these rice bubble monsters. Clean up is a breeze because it goes straight in the dishwasher. And the pan you see in the photos and video has been through the dishwasher about 100 times, and it is still perfectly non-stick.

These are a treat!
These are fun and cute, and yes, they are a treat- which means they are much higher in sugar than many other things on my blog. You could make them in a healthier way by using my not quite lcms recipe and styling them the same way.
But they are a treat and considering the bags of lollies that abound at Halloween, then these aren’t too bad. Everything in moderation I say.
What do I need to make them?
- 4 cups rice bubbles
- 1 cup desiccated coconut
- 100 grams butter
- 200 grams marshmallows
- Food colouring
- Sprinkles (I like these midnight magic ones)
- Monster eyes
How to make the rice bubble monsters
- Melt the butter and marshmallows together on the stove over medium heat.
- Combine the coconut and rice bubbles in a large bowl.
- Add food colouring to the marshmallow mix to colour.
- Pour the marshmallow mixture into the rice bubbles and mix well.
- Fill the RACO Aerolift muffin tray with the sticky rice bubble mixture.
- Top with sprinkles and add monster eyes.
- Refrigerate for 3 hours or until solid, then using the edge of a silicone spatula release them from the muffin pan and serve.
Substitutions
You can swap the butter for coconut oil. However they might not be as out-of- fridge stable, as coconut oil is quick to turn to liquid when warmed.
You don’t have to use food colouring, but they look super cute when green. They also look adorable purple.
Tips for making this recipe
No one wants to take forever making treats for a party! So here are the tips you need to get this done quickly and simply:
- Make sure you only melt the butter and marshmallows over medium heat. Too hot and they will burn.
- Press down on the sprinkles when they are on top of the rice bubble monsters so they will stick in the marshmallow mixture.
- Use a silicon spatula to ease under the edges of the monsters to remove from the pan.
How to store the rice bubble monsters
These will store well in the fridge in an airtight container for up to 4 days. If you need to keep them any longer, then I recommend freezing them.
