    When it comes to Christmas time, it's hot downunder in Sydney and that's where a treat like this delicious White Christmas comes in. Quick and easy to make, this treat can be in the fridge in 5 minutes! The hardest part is waiting for your delicious no-bake White Christmas to set. It's no bake, freezer friendly, easy to make in advance and only needs 6 ingredients!

    Why you're going to love this recipe

    When you're working with white chocolate, there is an inherent, almost over the top sweetness. So nothing else you put in it really needs to be super sweet. This is why the tart cranberries work so well and why the pistachios are awesome.Not only is this White christmas easy to make, but this classic Australian Christmas treat tastes so good! Here's why you're going to love this slice:

    What goes into the recipe

    desiccated coconut, white chocolate, rice bubbles, pistachios, coconut oil, cranberries
    • rice bubbles -use any rice cereal, like rice crispies, you can also use puffed brown rice
    • white chocolate -as this is the main flavour of this don't go cheap, I've used Nestle' melts
    • coconut oil (this helps with slicing)
    • cranberries - perfect for adding a sharpness and tartness to the recipe
    • pistachios- great for extra crunch and they add the green!
    • desiccated coconut - such a great binder in recipes like this!

    How to make this recipe

    • Melt the chocolate using your preferred method- mine is the microwave (see the recipe card and FAQs for instructions!
    • Add all the dry ingredients and mix well
    • Pour into a lined baking square dish (20cm) or into a silicone one
    • Set in the fridge for 3 hours or until it comes out of the container cleanly and can be sliced
    • Slice into long rows then chop into squares.

    Expert Tips and FAQS

    • choose a good quality white chocolate
    • pistachios are expensive shelled, if you want to make this more cheaply, buy them unshelled and set the kids to work
    • use a silicone spatula for mixing, it helps with scraping the bowl and getting all the good stuff into the dish for setting
    What's the best way to melt chocolate?

    Melt in the microwave! Sure, you can melt this in a double boiler, your thermocooker or even in the sunshine if you're in Sydney, but the quickest way is the microwave. I do this in a 1100W microwave, please adjust up or down depending on your power!
    This is my no-fail microwave melting method:
    50% power 1 minute
    get it out and stir
    50% power 1 minute more
    get it out and stir
    it only needs to be 80% melted, stirring with the residual heat in it will do the rest

    Why is there coconut oil in this White Christmas recipe?

    It's all about the slicing. Coconut oil when added to a melted chocolate keeps the set product just a little smoother and therefore easier to cut. It doesn't have any effect on the slice in any other way and works well with the flavours in the slice as it already contains coconut. If you don't have any you can substitute for vegetable or rice bran oil.

    Can I make this recipe with kids?

    This recipe is perfect for making with kids! My daughter - she's 10 even did the chocolate melting, with supervision. It's easy to mix and easy to get into the pan.

    Can I freeze White Christmas slice?

    White christmas needs to be stored in the fridge in Australia (want to find out more about Christmas in Australia?) but anywhere where it's cold at Christmas (I'm jealous!) you can store this in a container on the bench. It can also be frozen if you want to make it longer in advance. It will keep for a week in the fridge. It will keep for up to three months in the freezer, just refrigerate it while defrosting.

    Can I swap...

    cranberries- could be swapped for red lollies or sultanas
    pistachios- can be swapped for green lollies or any other nut
    white chocolate- can be swapped for milk chocolate if you prefer- but please don't call it brown Christmas

    Ingredients

    • 500 grams white chocolate melts
    • 1 tablespoon coconut oil
    • 1 cup dried cranberries
    • ¾ cup shelled pistachios
    • 1 ¼ cups desiccated coconut
    • 1 ¾ cups rice bubbles

    Instructions

    • Melt the chocolate with the coconut oil using your preferred method- mine is the microwave! 1 minute at 50%, stir, then another minute at 50%. (1100 W microwave)

      I'm sure this going to taste yum but my chocolate (after melting it using your method) started to set while I was stirring it into the dry ingredients. It was like I had way too much dry ingredients but I did them according to the recipe. I also used Nesltle chocolate melts. I don't live in a cold climate either. So what did I do wrong?
