When it comes to Christmas time, it's hot downunder in Sydney and I can't spend ages cooking, because that's heating up the house! That's where a treat like this delicious White Christmas comes in.

Melt in the microwave
Sure, you can melt this in a double boiler, your thermocooker or even in the sunshine if you're in Sydney, but the quickest way is the microwave. This is my no-fail microwave melting method:
- 50% power 1 minute
- get it out and stir
- 50% power 1 minute more
- get it out and stir
- it only needs to be 80% melted, stirring with the residual heat in it will do the rest
Selecting your dry ingredients
When you're working with white chocolate, there is an inherent, almost over the top sweetness. So nothing else you put in it really needs to be super sweet. This is why the tart cranberries work so well and why the pistachios are awesome.
Coconut oil
Why do I put coconut oil in this recipe? It's all about the slicing. Coconut oil when added to a melted chocolate keeps the set product just a little smoother and therefore easier to cut. It doesn't have any effect on the slice in any other way and works well with the flavours in the slice as it already contains coconut. If you don't have any you can substitute for vegetable or rice bran oil.
Ingredients

- rice bubbles -use any rice cereal, like rice crispies, you can also use puffed brown rice
- white chocolate -as this is the main flavour of this don't go cheap, I've used Nestle' melts
- coconut oil (this helps with slicing)
- cranberries - perfect for adding a sharpness and tartness to the recipe
- pistachios- great for extra crunch and they add the green!
- desiccated coconut - such a great binder in recipes like this!
Method
- Melt the chocolate using your preferred method- mine is the microwave!
- Add all the dry ingredients and mix well
- Pour into a lined baking square dish (20cm) or into a silicone one- I love these silicone ones from Everten (affiliate link)
- Set in the fridge for 3 hours or until it comes out of the container cleanly and can be sliced
- Slice into long rows then chop into squares.
Top tips for making white christmas
- choose a good quality white chocolate
- pistachios are expensive shelled, if you want to make this more cheaply, buy them unshelled and set the kids to work
- use a silicone spatula for mixing, it helps with scraping the bowl and getting all the good stuff into the dish for setting
Substitutions
- cranberries- could be swapped for red lollies or sultanas
- pistachios- can be swapped for green lollies or any other nut
- white chocolate- can be swapped for milk chocolate if you prefer- but please don't call it brown Christmas
Storage and freezing
White christmas needs to be stored in the fridge in Australia (want to find out more about Christmas in Australia?) but anywhere where it's cold at Christmas (I'm jealous!) you can store this in a container on the bench. It can also be frozen if you want to make it longer in advance. It will keep for a week in the fridge. It will keep for up to three months in the freezer, just refrigerate it while defrosting.
