You probably think I'm a little crazy being so obsessed with fritters. And that is ok. But there are a lot of good reasons that I'm loving them so much. Let's talk about fritters for the lunchbox. Oh and don't just put them in the lunchbox...fritters are awesome as a side at dinner time and also as a snack in the afternoon...and as a mum lunch.
Why bother with fritters for the lunchbox?
- they freeze well
- they allow you to get extra protein in
- they are crunchy
- they keep their shape in a lunchbox that gets knocked about
- they can be a great way to help the 5 a day of veggies along

Fritter freezer tips
We freeze them flat on a tray until they are solid and then transfer to containers in the freezer. Once solid they don't stick together and are easy to grab and pop in the lunchbox! Don't worry about defrosting if you forget as they will be perfect by lunchtime. If you've got time you can defrost them in the fridge overnight.

Everything dipped is more fun! We use tzatziki for dipping a lot of the fritters as the tang of the yoghurt works really well with the a lot of our favourite fritters, but for the fried rice ones and the sweet corn ones, we use sweet chilli.
So if you haven't tried them before, make some fritters and pop them in the lunchbox this week! They help to add variety and make lunch more interesting. Plus they are perfect for getting extra veggies in during the day so that dinner isn't all about the veg!

I freeze them on a tray and then transfer to a container when solid. Mind the salt content in the fetta ones for your bub- as fetta is very high in salt.
